Easy, Super-Quick Raw Pesto
I tried this the other night (from "Urban Vegan") and it's a good one!
Winter Pesto
3 C. fresh Spinach or Arugula or Basil (packed)
1/2 C. plus 1 Tbsp. extra virgin olive oil
5-6 cloves of garlic
1/2 C. pine nuts or walnuts (or both together)
1/4 tsp. salt and pepper to taste
Place all ingredients in a food processor. Process until smooth, scraping sides as needed.
Serve on top of any pasta.
Yields: 1 1/2 C. (really only covers pasta for 2)
